A chewing gum is provided which contains gum base and a non-aqueous solid fatty or gelatinous sweetener or flavorant, such as butter, marshmallow or caramel, solubilized in the gum base. The subject chewing gum has the appearance and mouth feel of chewing gum as opposed to candy and a delayed but prolonged sweetness or flavor impact. The chewing gum is laminated with a slab of chewing gum which will supply initial sweetness or flavor impact.A method for producing the above chewing gum is also provided.

Food composition comprising soluble solids in the range of about 50% to about 90% by weight, at least 70% by weight thereof being a sweetening system comprising sucrose and non-sucrose sweeteners in a weight ratio of sucrose to non-sucrose sweeteners of 0:100 to 95:5, wherein the non-sucrose sweetener is of a DE (Dextrose Equivalent) of at least about 30, a carrageenan component in an amount sufficient to form a gel, and water to balance, and wherein the gelation temperature of the composition is &lt;95.degree. C. The food composition may be produced by a process comprising (a) dispersing carrageenan in a syrup of a non-sucrose sweetener at a temperature sufficient to disperse the carrageenan in the syrup while stirring, (b) adding water and heating the mixture to the boiling point thereof, (c) adjusting the soluble solids content to from about 50% to about 90% by weight, (d) depositing the mixture and (e) cooling the mixture to below the depositing temperature of the mixture. The food composition gels rapidly and forms a gel at temperatures of below 95.degree. C. The food composition is especially confectionery products such as soft candies, marshmallows or glazings.

Water-soluble protein hydrolyzates and high-amylose starches provide an improved whipping system for aerated confections such as nougats, grained marshmallow, etc. The total whipping agent and sweetening agent requirements may be sterilized and aerated to a specific gravity of 0.75 or less. The high-amylose starches and protein hydrolyzates are film-formers and provide a supportive matrix for the aerated confections. The aerated confection permits the use of a broad range of sweetening agents without necessarily relying upon crystallized sugars for textural properties. High, moisture-containing, aerated confections with improved stability against moisture-loss may be obtained by substituting crystallizable sugars (e.g. sucrose) with sweetening agents which have a higher degree of humectancy.

Aerated confections

A method of preparing aerated food products, especially marshmallows, having a nutritionally fortified ingredient is provided. In accordance with a preferred form of the invention, the method includes the steps of: providing a liquid sugar confection blend comprising: a saccharide component; about 1 to 30% moisture; and a foam structuring agent; adding a dry particulate including a nutritional fortifying ingredient to the liquid confection blend; aerating the liquid confection blend to form an aerated confection plastic foam; extruding the aerated foam at a heated temperature to form an aerated confection extrudate; cooling the extrudate to solidify the confection to form a set aerated confection extrudate; forming the set aerated confection extrudate into pieces; and drying the pieces. The invention also concerns preparing a liquid confection blend seeded with a sweetener and a nutritional fortifying ingredient that can be used in making the aerated food products.
